A well-maintained commercial gas deep fryer can serve a busy kitchen for a decade. A neglected one becomes the most expensive equipment in the room — slow recovery, sour oil, failed safety cut-offs and mid-rush breakdowns. As a factory that builds gas fryers for restaurants, QSR chains and caterers worldwide, Kaesid put together this practical maintenance checklist. Follow it and your fryer will pay you back every single shift.
Skim crumbs throughout service. Floating debris burns, darkens oil and transfers bitter flavors to everything you fry. Skim with a fine skimmer every few hours — more often with breaded items.
Check the oil level and top up. Oil below the fill line exposes heating surfaces and accelerates breakdown. Always top up with fresh oil — never water, which can cause dangerous flash boiling.
Wipe down stainless steel surfaces. Grease buildup on the front and side panels hardens overnight. A quick wipe with a food-safe cleaner keeps sanitation audits painless.
Verify thermostat behavior. If your oil runs noticeably hotter or cooler than the dial setting, flag it early — a drifting thermostat is the first symptom of bigger problems.
Full oil change and tank drain. Use the full-port drain valve (1¼" on Kaesid models) to drain completely while the oil is warm but not hot. Partial drains leave the worst sludge behind.
Scrub the tank and cold zone. Remove sediment from the tank floor and the cold zone area where crumbs accumulate. A soft brush and manufacturer-approved cleaner protect the stainless steel finish.
Clean or replace fryer baskets. Carbonized oil on basket wires transfers to food. Soak baskets in degreaser and rinse thoroughly.
Inspect the gas connection and pilot. Check hoses for wear, confirm the pilot light burns steady and blue. A lazy yellow flame signals a gas or air problem — call a technician.
Deep-clean burners and baffles. On fryers with vertical cast iron burners and internal baffles, dust and grease reduce heat-transfer efficiency over time and drive up gas bills.
Test the 450°F hi-limit safety cut-off. This device is your last line of defense against overheating. Most models have a manual reset button — if it trips repeatedly, stop using the fryer and service it.
Check legs, casters and leveling. An unlevel fryer drains unevenly and stresses welds. Adjust the heavy-duty legs so oil flows fully toward the drain valve.
Lubricate the drain valve. Grease hardening inside the valve seat causes slow leaks. Lubricate per the manufacturer's spec with food-grade grease.

Pin this table next to the fryer — a checklist the staff can actually see gets followed.
1. Pilot light won't stay lit. Usually a dirty pilot orifice or a faulty thermocouple. Clean the orifice first; if it still drops out, replace the thermocouple — an inexpensive, serviceable part.
2. Slow temperature recovery. First check for scale and crumbs on heating surfaces (drain and clean). If recovery is still slow, verify gas pressure and burner condition — worn baffles or low gas supply are the usual culprits.
3. Oil temperature drifts from the setting. A drifting thermostat needs calibration or replacement. Don't ignore it: inaccurate temperature quietly degrades both food quality and oil life.
4. Drain valve runs slow or leaks. Sludge in the valve seat or a cold, thickened oil line. Drain warmer oil, flush the valve, and apply food-grade valve grease monthly.
5. Hi-limit keeps tripping. This one is serious — the safety cut-off is doing its job. Common causes: thermostat failure, low oil level, or heavy scale insulating the sensors. Take the unit out of service until a technician confirms the cause.
Not all fryers are equally friendly to maintain. When comparing models, look for:
Every Kaesid gas fryer — from the compact CTF countertop series to the open pot GF100K/GF122K — is built around these service-friendly details, because we manufacture for kitchens that run every day, not showrooms.
An uncleaned tank can cut oil life nearly in half. A drifting thermostat pushes frying temperatures up, accelerating oil breakdown and burning gas. A failed hi-limit switch is a safety hazard no kitchen can afford. Thirty minutes of daily care protects a machine worth thousands — and the food quality your reputation depends on.
